Easy Madras Sambar Recipe (for 3–4 people)
What You Need:
Main Ingredients:
- Toor dal (Kandi pappu) – ½ cup
- Tamarind – small lemon-sized ball (soak in warm water)
- Divya Madras Sambar Powder – 2 to 3 spoons
- Turmeric Powder – ¼ spoon
- Vegetables – 1½ cups (like drumstick, brinjal, carrot, okra)
- Tomato – 1 (chopped)
- Onion – 1 (small pieces)
- Salt – as needed
- Water – as needed
- Coriander leaves – for decoration

For Seasoning (Tadka):
- Oil or ghee – 2 spoons
- Mustard seeds – ½ spoon
- Cumin seeds – ½ spoon
- Red chillies – 1 or 2
- Hing (asafoetida) – a pinch
- Curry leaves – few
How to Make It:
- Cook the Dal
- Wash toor dal and boil it in a cooker with 2 cups of water and turmeric.
- Cook for 3–4 whistles until soft. Mash it and keep aside.
- Boil the Veggies
- In another pan, add chopped veggies, onion, tomato, and 1½ cups water.
- Add a pinch of salt and cook until veggies become soft.
- Add Tamarind & Spices
- Squeeze soaked tamarind and add the juice to the pan.
- Add 2–3 spoons of Divya Madras Sambar Powder.
- Let it boil for 5 minutes.
- Add Dal
- Now add the cooked dal to the veggies.
- Mix well and let it cook for 5–7 minutes on low flame.
- Do the Tadka (Seasoning)
- In a small pan, heat oil.
- Add mustard seeds, cumin, red chillies, hing, and curry leaves.
- When it splutters, pour it into the sambar.
- Garnish & Serve
- Add coriander leaves on top.
- Serve hot with rice, idli, dosa, or vada!
