Homestyle Mutton Curry (Mutton Masala Gravy)
A flavorful Indian curry featuring tender mutton pieces simmered in a spiced onion-tomato gravy. Perfect for pairing with steamed rice, roti, or naan.
Ingredients
For Marination:
- 500 grams mutton (bone-in or boneless, cut into 1.5–2 inch pieces)
- ¾ tablespoon ginger-garlic paste
- 2 tablespoons plain yogurt (curd)
- ¾ teaspoon salt
- 1 teaspoon Mutton masala or Garam masala
- ½ teaspoon Divya Red chili powder (adjust to taste)
- ¼ teaspoon turmeric powder
For the Curry:
- 1 cup finely chopped onions
- ¾ cup chopped or pureed tomatoes (about 1 large tomato)
- 1–2 green chilies, slit or chopped (optional)
- 1 sprig curry leaves or 1 bay leaf (optional)
- 2 tablespoons oil
- 1-inch cinnamon stick
- 3 green cardamoms
- 2 teaspoons meat masala or garam masala
- Salt to taste
- Hot water as needed
- Fresh coriander leaves for garnish
Instructions
1. Marinate the Mutton
In a large bowl, combine mutton pieces with ginger-garlic paste, yogurt, salt, turmeric, meat masala, and chili powder.
Mix well, cover, and let it marinate for at least 30 minutes. For best results, refrigerate and marinate overnight.
2. Prepare the Curry Base
Heat oil in a heavy-bottomed pot or pressure cooker over medium heat.
Add cinnamon stick and cardamoms; sauté until aromatic.
Add chopped onions and green chilies; cook until onions turn golden.
3. Cook the Mutton
Reduce heat to low and add the marinated mutton to the pot.
Sauté for 5–7 minutes until the mutton starts releasing moisture.
Stir in meat masala and curry leaves or bay leaf.
4. Add Tomatoes
Increase heat to medium and add chopped or pureed tomatoes.
Cook for another 5–7 minutes until the raw tomato smell disappears and oil begins to separate.
5. Simmer the Curry
Pour in hot water—¾ cup if using a pressure cooker, or 2 cups if cooking in a pot.
Stir well, cover, and cook:
- In a pressure cooker: Cook on medium heat for 4–5 whistles.
- In a pot: Bring to a gentle boil, cover, and simmer for about 1.5 hours, stirring occasionally and adding more water if needed.
6. Final Touches
Once the mutton is tender, check the gravy consistency.
If it’s too thin, cook uncovered on medium heat until it thickens.
Adjust salt and spices as needed.
7. Garnish and Serve
Garnish with fresh coriander leaves.
Serve hot with rice, roti, naan, or paratha.
